I searched through some old recipe books and found this recipe for shortbread which turned out remarkably well. As I always tell my daughters:  If I can bake this, so can anyone!
So here is the recipe if case any of you feel pekish.

Ingredients description

You will need:
500g soft butter (not melted)
500g (4 x 250ml) cake flour
260g (500ml) corn flour
250g (500ml) icing sugar

Preparation

Set oven to 150 oC (300 0F). Put butter in a bix mixing bowl and stir. Gradually add dry ingredients.
Roll dough out or press with hands to about 1cm think.  Cut in squares or whatever shape you prefer.
Put on a greased pan and bake for 30 - 40 minutes.
The recipe makes about 5 dozen biscuits.

(I know they look a bit white on the photo, the light was wasn't quite right, it was actually a light crispy brown.)
